Cowboy Meatloaf Recipe

With fall in the air, the colors of the leaves are changing, the apples are ready to be harvest, and delicious scents fill the air. There is nothing like a hearty meal to enjoy during this magnificent time of the year. This recipe is a delicious variant to the well-known meatloaf.

Cowboy Meatloaf

  • Total Time: 1 hour 15 minutes
  • Serves: 2

Ingredients:

  • 250g / ½ lb. mince beef
  • 25g / ¼ cup of tortilla chips
  • ½ bunch of spring onion finely chopped
  • ½ tsp ground cumin
  • ¼ tsp fresh ground pepper
  • 1 medium egg
  • 3 tbsp salsa
  • 25g / ¼ cup cheddar cheese

Preheat the oven to 180°c / 350°f

Place the mince in a large mixing bowl and add the finely chopped spring onions. Crush the tortilla chips directly over the bowl, and then add the cumin and the fresh ground pepper.

In a separate bowl, crack the egg and beat well. Add 2 tablespoons of salsa to the egg, and mix well. Add the egg salsa mix to the meat mix, and blend all the ingredients together. Don’t be afraid to use your hands! Press the mixture into a meatloaf / bread tin. Spread the remaining salsa on top and add the cheese. Bake for 45-1hour, or until there is no pink inside the meatloaf.

Stewed Apples

  • Cook Time: 45 minutes
  • Total Time: 50 minutes
  • Serves: 4

Ingredients:

  • 6 cups of apples
  • ½ cup brown sugar
  • ¼ cup apple juice
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp salt

Peel and chop the apples, and place them in a saucepan. Add all the ingredients to the saucepan, cover, and cook on low heat for 45 minutes, or until the apples are tender. Stir occasionally.

This dish is best served with a side of mash potatoes and fall vegetables.
